Tuesday is my regular grocery day, so on Monday I like to go through the fridge and try to use up as much as I can. And this vegetable curry is the perfect way to do that. Simple process, simple ingredients...and a great way to get lots of veggies into your meals. I served it simply with rice and sautéed kale and the whole meal paired perfectly with a dry Grüner Veltliner...this is back on the menu for a dinner party I have coming up, and I can’t wait!

At the restaurant it was simple and delicious, and I knew it would be great meal to recreate at home and add to my summer rotation. It did not disappoint. It’s versatile, veggies can be prepped ahead to throw this bowl together for lunches throughout the week and it is packed with flavor and texture.
