Whole30 Creamy Potato Soup

We’ve got our Christmas decorations up and it is freezing outside, so soup just felt right tonight. I made a Creamy Potato Soup (paleo & whole30, gluten & dairy free) with some turkey broth I made a couple of days ago. It was delicious, warm, and comforting… perfect for eating on the couch by the tree. 😊🎄

Ingredients (serves 2-4):
2 large russet potatoes, peeled and cubed
2 cups (turkey or chicken) broth
1 cup coconut/almond milk
2 T grass fed butter or ghee
Salt, pepper, garlic & onion powder, to taste

Instructions:

Place ingredients in a medium pot and mix together. Bring to a boil and then lower heat to a simmer, cover, and cook for 45 minutes or until potatoes are tender. Remove from stove, and use an immersion blender to blend ingredients and achieve a creamy consistency. Taste-test and add salt if needed! Serve and top with jalapeño, bacon bits, or if you’re feeling wild, some shredded cheese 😮
